Good Eats

Pat was out of town last night so I was all on my own for dinner, this is what I came up with:
Tomato, mozarella, basil salad with peper & a drizzle of balsamic vinegar.

Cooked kale with Thai peanut noodles.

La Croix with lemon & mint from my garden with strawberries & raspberries dipped in melted chocolate chips.

Dances with Dirt

I'm so, so sore today. I Danced with Dirt on Saturday and I can't believe how much it beat up my ego!
Dances with dirt is a 50K or 50 Mile Ultra, OR a 100K relay. I ran the relay with 4 other people. It's advertised as the Bloodied, Boned, Bruised & Burned series. It takes place in Hell, MI. Each team member is required to run 3 legs, the legs vary from 2.4 miles to 7.04 miles. They have names such as "Buttslider", "Purgatory", "Stripper Pole", "Styx, River of Death", & "Vertigo". One leg runs through a swamp that sometimes requires a second person to help you out, another has multiple river crossings and ends running through a river, and "Everything's Bovine" goes through a mud hole. It certainly was gruelling, but it was also so much fun!

Good & Bad

Two weekends ago was an awesome weekend...Pat & I both placed in the Witch's Hat 5K, then we had a great time in East Lansing. We really enjoyed each other company.

Last weekend was one of those weekends that I'm glad is behind me. We had a really nice time with some friends on Friday night but I was out way past my bedtime. Which is normally 10:30pm ish, but on a race night, which it was, I like to be in bed at 9:30-10. I didn't get to bed until 11:30 and I was hurting the next morning. I was tired, my body felt stiff & sore, & my stomach just didn't feel right. I was still determined to run so I headed off to my race. I never made it out of my car. I just didn't have the energy and I didn't want to be miserable during a race. So I went home & headed back to bed. I ended up sleeping until12:30...not like me at all! Since I slept in, I also ended up missing the football game that Grace was cheering at. So even after well needed rest I was crabby. Hubby to the rescue! He & I went to "Alpaca Day" that was held at a local Alpaca Ranch that is owned by one of his friends. How can you not smile while being around cute, furry animals!?! Then I had a little girl time both in the evening & the next day. I met Jody for dinner in Novi, we had a lot of catching up to do. Then the next morning I had a well needed brunch with two of my besties.

This week has been just kind of a blah week but I'm hoping for things to pick up again this weekend.

Tonight is a dinner with some friends to kick off "Dances with Dirt" also know as DWD. Pat & I are both running the 100K relay on two seperate teams. It's a race that I've always wanted to do but never had a team. The race sounds pretty gueling...swamps, pickers, & poison ivy. Should definitely be an adventure!

Happy Friday - Weekend Fun!

I'm so glad the weekend is finally here!

I just had my first one of these for the, it's not a pumpkin spice latte, it's a salted caramel mocha...yummy!

Tonight I think we are heading to the High School to watch Grace cheer. I guess the Junior Football League Cheerleaders are taking turns cheering at different quarters of the High School game.

Tomorrow we're hoping to run the Witch's Hat 10K. I haven't run since Sunday since it's been a crazy week so it should be interesting.

Then it's date night...
The plan is to head to East Lansing (Pat's alma mata) to watch MSU play Central, I'm really more intersted in the Michigan home opener against Air Force.

I can't believe that summer is over, well technically we still have 16 days left. In some ways I feel like I didn't accomplish anything but in other ways, I did a lot! I mean I got married, as if that isn't big enough. ;)

I've been trying to make some changes in my life to be healthier & more organized. They often go hand-in-hand since if you have healthy meals, snacks, & exercise planned out they get accomplished, verses, being starving and reaching for a quick and easy unhealthy snack to satisfy hunger.

The first thing I did was spend some time on pinterest. I came across this:

Pat was out of town so I decided that since I had the house to myself it was a good time to try out some of these recipes. I picked out four that I thought would work with my family and started cooking away. I made the breakfast burritos, the chicken spaghetti, the lazy lasagna, & the bbq chicken. I LOVE the burritos. It's great to have a healthy breakfast that is grab & go. Pat reheated the chicken spaghetti one night for the kids and it was a huge hit! I had to make a few alternations on things since the kids can be kind of picky. I was worried that they weren't going to like this one, they have since asked for it again. And life is just a little bit easier having some meals that just need reheated.

I also started bringing two water bottles to work. I tend to eat less when I'm hydrated.

I was following a running training plan but fell off the wagon this past week. I kind of have an excuse, I had a minor surgery done and didn't have energy to run for a few days.  I'm just going to write that off and hope to get back on track (pun intended) this weekend. The big thing that helped me to start off so well was to recruit friends to run with me. Then I'm held accountable to showing up and getting the work done.
